For the dumplings
350 grams starchy potatoes
2 day-old White rolls
200 grams Spinach
150 grams Crème fraiche
1 Tbsp Pastry flour
1 egg
salt
freshly ground peppers
Nutmeg
1 garlic clove
also
60 grams butter
coarsely grated Parmesan

Preparation steps

1.

For the dumplings, rinse potatoes, peel and cook in boiling salted water until knife-tender, about 25 minutes. Drain and squeeze through a ricer.

Rinse spinach, trim and blanch in boiling salted water. Drain, rinse and drain again. Express and chop.

Cut rolls into small cubes.

Knead potatoes, spinach, bread cubes, creme fraiche, egg, minced garlic and flour together and season with salt, pepper and nutmeg.

Cover dumpling mixture and refrigerate for 20 minutes.

Mold dumplings from mixture and place in boiling salted water. Simmer and cook until done, about 15 minutes.Dumplings are done when they float to the surface.

Drizzle the finished dumplings with brown butter and serve with Parmesan.
