500 grams starchy potatoes
250 grams fresh Spinach

1 shallot
1 garlic clove
1 Tbsp olive oil
75 grams Pastry flour
2 Tbsps grated Parmesan
1 egg yolk
1 egg

80 grams Walnut
40 grams butter

Preparation steps

Scrub potatoes and steam for about 30 minutes. Rinse spinach and blanch in boiling salted water for about 1-2 minutes. Drain and squeeze, chop finely. Peel shallot and garlic, chop finely. Heat olive oil in a pan and saute shallot and garlic until translucent, add spinach and remove from heat.

Peel potatoes, and press through the ricer. Mix well with spinach, flour, Parmesan, egg and egg yolk, season with salt, pepper and nutmeg. Add more flour, if needed.

With two tablespoons, remove dumplings from the mixture and cook in salted boiling water for about 10 minutes. Chop nuts coarsely. Remove dumplings with a slotted spoon, drain well. Heat butter in a pan and toss dumplings with nuts for a few minutes. Arrange on warmed plates and serve.
