0.333 cup olive oil
6 cups baby Spinach (washed)
4 cloves garlic cloves (minced)
141 ozs Salmon (gutted and scaled)
1 Red onion (sliced)
1 lemon (sliced)
1 cup dry white wine
thyme
salt
freshly ground Black pepper

Preparation steps

1.
Preheat the oven to 170°C(150° fan)|325F|gas 3.
2.
Heat tablespoons of oil in a large frying pan and fry the spinach with the garlic, in batches, until wilted. Tip the wilted spinach into a colander and press against the side to extract some of the water.

Fill the gutted spinach with the spinach and red onion. Season with salt and pepper and drizzle with any remaining olive oil.
4.
Tie the salmon with kitchen string and lift the salmon into a baking dish or roasting tray. Pour in the white wine and top the salmon with lemon slices and more seasoning.
5.
Cover the dish with aluminium foil and bake the salmon for 1 hour 30 - 45 minutes until the fish is firm and flakes easily with a fork.
6.
Remove from the oven and garnish with thyme before serving.
