Preparation steps

1.

Peel and finely dice 2 of the onions and 2 of the garlic cloves. Thinly slice 1/4 bunch of the chives. Finely dice the green chili pepper. Squeeze the juice from the lime. Bring 1 liter (approximately 1 quart) of water, the onions, garlic, chives, green allspice, parsley, bay leaves, and lime juice to a boil.

2.

Add the shrimp and cook for 10 minutes. Remove the shrimp from the water, drain thoroughly, and keep warm. Reserve the cooking liquid. Finely dice the remaining onion and garlic. Thinly slice the remaining chives. Finely dice the red pepper.

3.

Pass half of the cooking liquid through a fine strainer. Mix the strained liquid with the remaining onions, garlic, and chives. Add the chili, remaining allspice, and oil. Season to taste, and serve with the shrimp. Garnish the dish with lime halves.
