- 400 grams Pork tenderloin
- 1 tsp black peppercorns
- 4 allspice
- ¼ tsp Cumin
- 1 garlic clove
- 12 jalapeño chili peppers
- salt
- 3 Tbsps Herb butter
- 100 grams Peanuts (shelled, unsalted)
- 2 red chili peppers
- 200 milliliters Coconut milk
- 2 Tbsps Peanut paste
- 1 tsp sugar
- 1 Tbsp Lime juice

Preparation steps

Rinse meat, pat dry and cut into thin slices. Crush the peppercorns, allspice berries, cumin and peel garlic cloves in a mortar. Rub the meat with the spice mixture. Halve the jalapenos lengthwise and wrap each with a slice of meat. Thread 3 jalapenos on wooden skewers and season with salt to taste. Heat 2 tablespoons of herb butter in a skillet. Add the skewers and cook for 5-6 minutes.

Toast the peanuts and chiles in a dry skillet until golden. Allow to cool before crushing in a mortar. Add the crushed peanut mixture, coconut milk, peanut paste, sugar and remaining herb butter to a small saucepan and simmer for 2 minutes. Season with salt and lime juice to taste. Serve the sauce with the skewers and fresh flatbread.
