- For the satay
- 21 ozs pork fillets (cut into thin strips about 2 cm|3/4" wide)
- 2 cloves garlic cloves (crushed)
- 1 red chili pepper (deseeded and split lengthwise)
- 1 shallot (finely chopped)
- ¼ tsp ground Cumin
- ¼ tsp ground cilantro
- 2 Tbsps soy sauce
- 4 Tbsps Coconut milk
- 2 Tbsps Oil
- salt
- freshly ground peppers
- For the peanut sauce
- 1 cup unsalted Peanuts
- 1 red chili pepper
- 4 Tbsps Peanut oil
- 1 shallot (chopped)
- 2 Tbsps Peanut butter
- 1 tsp Curry powder
- 1 lemon (juice and grated zest)
- 1 pinch sugar
- salt
- freshly ground peppers
- ⅜ cup chicken stock
- To garnish
- 1 red chili pepper (deseeded and split lengthwise)
- Lime wedge
Preparation steps
1.
For the satay: put the pork into a large bowl.

Mix the remaining ingredients to make a marinade and marinate the strips of pork for at least 2 hours.

Heat the grill.

Remove the pork from the marinade, drain and thread lengthways on wooden skewers. Grill for about 4 minutes, turning frequently. Alternatively fry in a little oil in a frying pan.

For the sauce: toast the peanuts in a dry frying pan and leave to cool. Crush finely with a pestle and mortar with the chilli.

Heat the oil and gently cook the shallot until translucent. Stir in the peanut butter, curry powder, crushed peanuts and chilli, lemon juice and zest. Add sugar, salt and pepper to taste.
7.
Stir in enough chicken stock to produce a creamy sauce. Spoon into a serving bowl and garnish with the red chilli.
8.
Arrange the pork skewers on a serving plate with the bowl of sauce. Garnish with lime wedges
