1 centimeter fresh ginger
1 tsp Curry
1 red chili pepper (finely chopped)
2 small onions
2 Tbsps parsley (chopped)
2 Tbsps vegetable oil
2 egg yolks

Preparation steps

For the skewers: Peel and finely chop ginger. Peel and finely chop onions. Fry in oil. In a bowl, mix ground beef with onions, ginger, chile pepper, curry, egg yolks and parsley. Season with salt and pepper. With your hands, shape into 18-24 small, elongated rolls and thread onto lemongrass skewers. Brush with oil and grill until cooked through.

For the dip: Blanch tomatoes and rinse with cold water. Remove skins and seeds. Finely chop tomatoes. Halve chile peppers lengthwise, remove seeds and ribs; chop finely. Peel and finely chop garlic. Simmer tomatoes, garlic and chiles about 10 minutes. Puree to desired consistency. Let cool, then season with sugar, salt and pepper.

To serve: Drizzle ground beef skewers with lime juice and serve with salad and rice.
