- 1 ⅕ kilograms Chicken wing
- 1 onion
- 4 garlic cloves
- 1 Tbsp Peanut oil
- ½ tsp ground Cumin
- ½ tsp ground allspice
- ½ tsp ground Coriander
- thyme (1/4 teaspoon dried)
- oregano (1/4 teaspoon dried)
- 2 dried red chili peppers
- 500 grams pureed Tomatoes (canned)
- 2 Tbsps cane sugar
- salt
- peppers
- 2 Tbsps White vinegar
- 1 Tbsp Worcestershire sauce
- 2 Tbsps Orange liqueur
- 4 pickled green chili peppers
- 200 grams Whipped cream

Preparation steps

Rinse chicken wings, pat dry and cut off the wingtips.

Peel onion and garlic and chop finely. In a saucepan, heat the oil and sauté onion and garlic. Mix spices, herbs and dried chiles in a mortar and add along with the tomato puree to the onion-garlic mixture. Simmer for about 20 minutes, stirring occasionally. Season with sugar, salt, pepper, vinegar, Worcestershire sauce and orange liqueur.

Cover chicken wings with about 1/3 of the tomato sauce. Sprinkle heavily with spice and herb mixture. Cook the wings for about 8-10 minutes on each side on a hot grill, until browned and crispy.

Place chicken wings on a serving dish and pour the remaining tomato sauce over them. Garnish with the sliced chiles. Serve with sour cream.
