3 ½ lbs Chicken wing
8 ozs Ketchup
2 Tbsps brown sugar
2 Tbsps Vinegar
2 Tbsps soy sauce
1 garlic clove
2 Tbsps vegetable oil
cayenne pepper
1 Lime
For the sauce
12 ozs Tomatoes
2 Red chili peppers
2 garlic cloves
Juice of half a Limes

Preparation steps

Rinse chicken wings, pat dry and place in a shallow baking dish. To make marinade, whisk remaining ingredients except for the lime juice. Press garlic through a garlic press into marinade. Pour marinade over the chicken wings, cover and refrigerate overnight, turning once. Line a baking pan with aluminum foil and brush with a little oil. Drain chicken wings and place in pan. Bake in an oven preheated to 220°C (approximately 425°F), about 15 minutes. Turn wings and bake 5 minutes more. Brush wings with marinade, turn and brush again with marinade. Bake 10 minutes more.

To make sauce: Rinse tomatoes and blanch in boiling water. Rinse with cold water, peel, quarter, remove seeds and finely chop. Peel garlic and press through a garlic press. Halve chile peppers, remove seeds and ribs and finely chop. Mix chiles with tomatoes and garlic and season with salt, pepper and lime juice. Serve chicken wings with sauce and lime quarters.
