- 600 grams Chicken breasts
- 1 Red Bell pepper
- 1 yellow Bell pepper
- 1 green Bell pepper
- 250 grams small button Mushroom
- 16 bay leaves
- For the marinade
- 1 tsp dried Red pepper flakes
- ½ tsp ground paprika
- freshly ground peppers
- salt
- 1 tsp thyme
- 1 tsp rosemary
- 4 Tbsps olive oil
- 1 organic Lime (Juice and zest)
Preparation steps

Rinse chicken breast, pat dry in cut into 2 cm (approximately 3/4 inch) cubes. Rinse and halve peppers, remove seeds and ribs, and cut into 2 cm (approximately 3/4 inch) cubes. Wipe mushrooms clean and thread alternately with peppers and chicken cubes onto skewers.

Place bay leaves on ends of skewers. To make marinade: Finely grind spices and herbs in a mortar and pestle. Mix with oil, lime juice, and lime zest. Drizzle skewers with marinade. Marinate about 30 minutes. Place skewers on a hot grill. Grill 4-5 minutes per side. Serve immediately.
