Externally, the Satsuma resembles the tangerine - but internally it has twice as much vitamin C to offer. Thus, the exotic makes a valuable contribution to firm connective tissue and good wound healing. Sweetening less intensively with honey rather than refined granulated sugar, provides vitamins, minerals, trace elements, and enzymes. The latter keep pathogens at bay and soothe mucous membranes affected by coughing.

You can get satsumas at the weekly market, in organic food stores or in well-stocked supermarkets. If you can't find them, it's best to replace the citrus fruits with tangerines.

1 lemon
5 -6 cloves
2 Cinnamon stick
7 ozs Apple juice (naturally cloudy)
3 ½ ozs Coconut milk
4 tsps honey

Preparation steps

1.

Wash satsumas and rub dry. From 1 satsuma cut off the peel very thinly, cut the 2nd fruit into thin slices, halve the remaining fruit and squeeze out the juice. Halve lemon and squeeze juice as well.

Heat satsuma juice, zest and slices, lemon juice, cloves, cinnamon sticks, apple juice, coconut milk, and about 7 ounces of water in a saucepan over medium heat. Turn off heat, cover punch, and let steep for about 10 minutes. Pour into glasses, sweeten each with 1 tsp. honey and drink while still warm.
