- For the pastry
- 3 cups all-purpose flour (plus extra for dusting)
- ¼ cup xylitol
- ¼ tsp salt
- 1 cup butter
- 1 egg (beaten)
- 1 egg yolk (beaten)
- water
- For the filling
- 32 ozs cooking Apple (peeled, cored and thickly sliced)
- 2 Tbsps lemon juice
- ⅔ cup xylitol
- ¼ cup all-purpose flour
- 1 tsp ground cinnamon
- 1 pinch salt
- 0.1 cup butter (diced)

Preparation steps
1.
For the pastry: put the flour, xylitol and salt in a mixing bowl. Rub in the butter until the mixture resembles breadcrumbs. Add the egg and egg yolk and knead into a firm, smooth dough. If it is too dry, add a little water. Wrap in cling film and chill for 30 minutes.

Heat the oven to 190°C / 375°F . Grease a deep 23cm / 9" cake tin.

For the filling: mix the apples with the lemon juice.

Mix together the xylitol, flour, cinnamon and salt and mix into the apples.
5.
Roll out 2/3 of the dough on a floured surface, slightly larger than the tin and line the tin.
6.
Add the apples and spread evenly. Sprinkle with the butter.
7.
Roll out the remaining dough to cover the tin and press on top of the apples. Press the edges with a flat knife.
8.
Brush the pie with beaten egg and cut 2 small holes in the centre of the pie.
9.
Bake for 35-45 minutes until golden brown.
