½ tsp freshly chopped Tarragon
2 bay leaves

Preparation steps

Peel the garlic, and blanch for 3 minutes in boiling salted water. Rinse thoroughly, drain well, and add to a jar. Bring the vinegar, sugar, 100 ml (approximately 3 ounces) of water, the herbs, and the spices to a boil in a saucepan. Reduce the heat and simmer for 5 minutes.

Pour the cooking liquid over the garlic. Seal tightly, and cool completely. Store the jar in a dark, cool place.
