800 grams predominantly waxy potatoes
2 egg yolks
150 grams grated Mountain cheese
1 Tbsp Potato starch (depending on potato variety)
¼ tsp Caraway
Nutmeg
vegetable oil (for cooking)

Preparation steps

1.

Peel and grate potatoes. Place into a damp kitchen towel and hang over a bowl for a while. Collect resulting juice and drain, collect potato starch on the bottom of the bowl. Combine grated potatoes with egg yolks, cheese and potato starch, mix well. Season with cumin powder and nutmeg.

Heat oil in a pan and add piles of potato mixture, flatten with a spoon. Cook for about 2-3 minutes per side or until golden brown. Drain on paper towels. Prepare all hash browns in the same manner until all mixture is used. 

3.

Pile hash browns on plates and serve seasoned with salt and pepper. Serve with salad, if wanted.
