Preparation steps

1.

Cut the apricots into small cubes and mix with the spelt berries and 4 tablespoons of lemon juice in a porcelain bowl. Sprinkle the mixture with 3-4 tablespoons water and let soak overnight in the refrigerator.

2.

Next morning, rinse the fresh blueberries, pick and drain in a colander. Thaw the frozen blueberries. Peel the apples, grate coarsely and immediately mix with 4 tablespoons lemon juice so they do not turn brown.

3.

Mix the yogurt with the cream, apple juice and honey and mix into the grated apples. Mix the apricot mixture and yoghurt-apple mixture together to form the cereal, and spread over four bowls or soup plates.

4.

Coarsley chop the walnut kernel and sprinkle together with rye sprouts over the cereal. Garnish the cereal with blueberries before serving.
