For the sorbet
1 Lime
200 grams sugar
200 milliliters water
100 milliliters dry Sparkling wine
1 Cantaloupe (such as cantaloupe)
For the garnish
Lemon balm
Lime zest

Preparation steps

1.

For the sorbet, rinse lime in hot water, finely grate zest and squeeze juice from lime.

2.

Add sugar, lime zest, lime juice and water to a saucepan and boil for about 3 minutes while stirring. Reduce heat and simmer. Add sparkling wine.

3.

Cut melon in half, remove seeds and peel. Cut fruit into small pieces, puree in a blender and stir into wine mixture.

4.

Pour sorbet mixture into a metal bowl and place in the freezer for about 6 hours, stirring well after 1 hour and then again every 30 minutes after that. 

5.

To serve, scoop sorbet into chilled glasses and garnish with lemon balm and lime zest.
