- 1 Lime
- 200 grams sugar
- 200 milliliters water
- 100 milliliters dry Sparkling wine
- 1 Cantaloupe (cantaloupe)
- To garnish

Preparation steps
1.
Rinse, peel and squeeze the lime.
2.
Place sugar, lime zest and juice and water in a saucepan and boil while stirring for about 3 minutes. Then let simmer. Add the sparkling wine.
3.
Cut the melon, remove the seeds and peel. Cut the flesh into cubes, puree and mix with the sugar water.
4.
Place everything in a metal bowl and put in the freezer for a total of about 6 hours. After an hour, stir well with a whisk or fork. Stir every half hour.
5.
To serve, fill the sorbet as desired in chilled glasses or serve in a chocolate waffle bowl.
