Melons are very hydrating fruits, as they contain plenty of water. They are also full of vitamins, minerals, and fiber.
If you don't drink alcohol, use sparkling grape juice instead.

- For the sorbet
- 1 Lime
- 7 ozs sugar
- 7 ozs water
- 3 ozs dry Sparkling wine
- 1 Cantaloupe
- To garnish
- Lemon balm
- Watermelon (melon balls)
- muskmelon (melon balls)
- small Melon

Preparation steps
1.
Rinse, peel and squeeze the lime.
2.
Add the sugar, lime zest and juice, and water in a saucepan and boil while stirring for about 3 minutes. Then simmer. Pour through a sieve and mix with the sparkling wine.

Cut the melon, remove the seeds and peel. Mince the flesh, puree and mix with the sugar water.
4.
Pour everything in a metal bowl and place in the freezer for a total of about 6 hours. After an hour, stir well with a whisk, then stir again every half hour.
5.
Serve sorbet in chilled melon halves and serve with some well-chilled melon balls. Garnish with lemon balm.
