- 1 chicken (approx. 1.2 kg, quartered)
- salt
- peppers
- olive oil
- ⅜ cup Red wine
- 7 ozs Pearl onion
- 1 yellow pepper (cut into strips)
- 3 ½ ozs black Olives (pitted if desired, drained)
- 4 Tomatoes (diced)
- 1 tsp dried oregano
- 1 cup vegetable stock (if needed)

Preparation steps
1.
Heat the oven to 180°C (160°C fan ) 375°F, gas 5.
2.
Season the chicken with salt and pepper and brush with olive oil. Brown on all sides in a frying pan and deglaze with the wine.
3.
Place the chicken skin-side up in a baking tin and arrange the vegetables around it. Sprinkle with the oregano and season with salt and pepper.
4.
Cook for about 40 minutes, basting the chicken with the sauce and adding stock as necessary. Season to taste and serve.
