2 Tbsps olive oil
4 Chicken thigh (trimmed of excess fat)
4 Chicken drumstick (trimmed of excess fat)
4 Bell pepper (split in half)
3 cups new potatoes
1 head garlic cloves (separated into cloves)
2 vidalia sweet onions (chopped)
1 cup low-sodium chicken stock
3 Tbsps flat-leaf parsley (chopped)
salt
freshly ground Black pepper

Preparation steps

Preheat the oven to 180°C (160° fan) | 350F | gas 4. Toss together the olive oil, chicken peppers, potatoes, garlic cloves, and onion in a large roasting tray.

Pour in the stock and cover with aluminium foil. Roast for 40 minutes.
3.
Remove the foil and roast for a further 15 - 20 minutes until the chicken is golden and cooked through.
4.
Remove the tray to a wire rack to cool. Season with salt and pepper before serving with a garnish of chopped parsley.
