Preparation steps

Cook the spaghetti in boiling salted water until al dente.

Toast the pine nuts in a dry pan until golden brown. Remove from the pan and let cool. Rinse and trim the watercress, then dry thoroughly. Peel the garlic, then puree with the watercress, and pine nuts in a blender. Heat the oil, then add to the puree gradually until a thick pesto forms. Mix in the parmesan, then season to taste with salt, pepper, and lemon juice.

Drain the pasta, mix with the pesto, and serve on warmed plated. Garnish with freshly grated parmesan cheese.
