400 grams Spaghetti
salt
4 egg yolks
250 milliliters Whipped cream
freshly ground peppers
150 grams Pancetta (sliced)
1 garlic clove
1 Tbsp olive oil
2 Tbsps freshly chopped parsley (for garnish)
60 grams grated Parmesan (to taste)
80 grams Caper (to taste)

Preparation steps

1.

Cook spaghetti in a pot of salted water until al dente.

Mix egg yolks with cream in a bowl and season with salt and pepper. Cut pancetta into pieces. Peel garlic and chop finely. Sauté bacon in hot oil in a pan. Add garlic, sauté briefly and mix pasta. Remove from heat and immediately mix in egg-cream mixture.

3.

Arrange pasta plates and serve garnished with parsley. If desired cover with grated Parmesan and capers.
