- 6 Date (dried and pitted, quartered)
- 1 Apple (peeled and diced)
- 4 cups mixed Lettuce (oat leaf lettuce, batavia lettuce, rocket, dandelions, torn into bite-sized pieces)
- ½ bunch mixed Fresh herbs (mint, lemonbalm, coriander, basil, leaves removed)
- 1 red pepper (diced)
- 1 Tomato (diced)
- ½ cup roasted Pine nuts (to garnish)
- For the dressing
- 4 Tbsps white balsamic vinegar
- 4 Tbsps olive oil
- 1 tsp hot Mustard
- 1 tsp honey

Preparation steps

Drizzle the dates and the apples with a little vinegar and stir all the salad ingredients together.
2.
Place all the ingredients for the dressing in a shaker, shake well and pour over the salad. Arrange on plates, sprinkle with pine nuts and serve immediately.
