1 red pepper (seeded and sliced)
1 green pepper (seeded and sliced)
1 yellow pepper (seeded and sliced)
2 Tbsps olive oil

2 Tbsps Golden raisins
2 Tbsps Pine nuts (toasted)
Chervil (to garnish)

Preparation steps

1.
Preheat the oven to 200°C | 400F | gas 6.
2.
Place the peppers in a roasting tin and toss with the oil and some seasoning. Roast for 20-25 minutes or until tender and lightly caramelised.
3.
When still just warm pour the peppers and their cooking juices into a bowl.
4.
Top with crumbled goats cheese, raisins and toasted pine nuts. Serve with a garnish of chervil.
