9 ozs fresh Peas
9 ozs Snow peas
4 ozs Watercress (or spinach leaves)
8 slices white bread
1 oz butter
3 Tbsps olive oil
salt
freshly ground peppers

Preparation steps

1.

Rinse the peas and snow peas and steam for about 10 minutes in a pot.

Rinse the watercress and shake dry.

Butter the slices of white bread on one side (the outer side).

Preheat the grill.

Distribute the peas and half the snow peas over 4 slices of bread. Drizzle with olive oil and season with salt and pepper. Cover with the remaining bread slices.

Spoon the remaining snow peas on top of the sandwiches and place them on the grill. Close the lid and grill for about 3 minutes.

Remove the sandwiches, slice diagonally and serve garnished with the salad.
