1 bunch scallions
1 shallot
4 Tbsps White vinegar
freshly ground pepper
1 pinch sugar
6 Tbsps olive oil
1 bunch parsley
1 bunch Basil

Preparation steps

Cook the tagliatelle according to the package instructions in plenty of salted water until al dente. Rinse cold and drain.

Rinse and trim the snow peas and blanch for 2-3 minutes in salted water. Rinse the scallions and cut lengthwise into strips. Add to the snow peas for the last minute of cooking time. Drain everything through a sieve, rinse cold and drain again.

Peel the shallot and chop finely. Mix with the vinegar, the sugar and olive oil in a large bowl and season with salt and pepper. Mix in the tagliatelle, snow peas and scallions.

Rinse the herbs, shake dry and chop finely. Rinse the lettuce and shake dry.

Arrange the pasta salad on the lettuce leaves and serve garnished with herbs.
