¼ cup olive oil
2 onions (finely chopped)
2 cloves garlic cloves (minced)
6 medium Beets (peeled and chopped)
1 medium Beet (peeled and finely diced)
3 cups vegetable stock
cup double cream
salt
peppers
rosemary (to garnish)

Preparation steps

1.
Heat the olive oil in a large saucepan over a medium heat and sweat the onion and garlic together with a little salt for 4-5 minutes until they start to soften.
2.
Stir in the chopped beetroots and cook for a further 2 minutes. Cover with the stock and bring to a simmer.
3.
Cook gently for 25-30 minutes until the beetroot is tender.
4.
Remove from the heat and stir in the cream. Puree using a stick blender until smooth and adjust the seasoning.
5.
Ladle into serving bowls and garnish with the finely diced beetroot and a sprig of rosemary.
