- 4 Tbsps butter
- 1 stick Celery (finely diced)
- 1 medium-sized onion (finely diced)
- 2 Tbsps flour
- 3 ½ cups chicken stock (bought product)
- ⅔ cup Peanut butter
- salt
- freshly ground peppers
- 1 Tbsp lemon juice
- 2 Tbsps unsalted, roasted Peanuts (roughly chopped)
Preparation steps

Melt the butter in a wide pan and sweat the celery and onion over a medium heat, stirring.

Sprinkle with flour, sweat briefly, then gradually stir in the stock.

Add the peanut butter and simmer over a low heat, stirring constantly, for about 10 minutes.
4.
Season the soup with salt and pepper and add lemon juice to taste. Serve sprinkled with chopped peanuts.
