- 4 Fennel bulb (finely sliced)
- 2 sticks Celery (finely sliced)
- 1 Leek (finely sliced and washed)
- 2 medium, white potatoes (peeled and diced)
- 3 cups vegetable stock
- salt

- To garnish
- 2 Chives (finely chopped)

Suggested variation; add 1 peeled, cored and diced apple to the mixture before slow cooking. Garnish with julienned strips of apple.
Preparation steps
1.
Heat the olive oil in a large casserole dish set over a medium heat. Sweat the fennel, celery and leek with a little seasoning for 10-12 minutes, stirring frequently, until softened.

Add the potato and stock and stir well. Pour everything into a slow cooker and cook on a low setting for 4 hours.

After 4 hours remove a little of the leek which will act as a garnish. Puree with a stick blender until smooth.
4.
Adjust the seasoning to taste then ladle into warm soup bowls. Garnish with the leek and chives before serving.
