Season the steaks with salt. Oil the barbecue or griddle pan and sear the steaks for around 2 minutes on each side. Continue cooking over a low heat until they have reached the desired level of cooking (2-6 minutes depending on the thickness of the meat).
Take out of the pan and leave to rest for a few minutes. Before serving, slice finely and sprinkle with Szechuan pepper.
