- 18 ozs Tofu (cut into 4 larger or 8 smaller slices)
- 3 Tbsps soy sauce
- 2 Tbsps Nut oil
- 1 Tbsp Corn starch
- 2 chili peppers (red and green, sliced into rings)
- 2 shallots (sliced into rings)
- 1 clove garlic cloves (finely chopped)
- 2 Tbsps Pine nuts
- 1 ¼ cups chopped Tomatoes (tinned)
- ⅜ cup Rice wine
- Lime juice
- brown sugar

Preparation steps

Drizzle the tofu with the soy sauce and leave to marinate.

Heat the oil in a frying pan. Drain the tofu slices, dust with cornflour and fry on both sides until golden. Remove from the pan and stir fry the chillies, shallots, garlic and pine nuts, lightly browning. Add the tomatoes, rice wine and a little soy sauce and simmer for around 10 minutes until the sauce thickens slightly.

Return the tofu to the pan and heat through. Season to taste with a dash of lime juice, a pinch of brown sugar and a little salt. Serve as a side dish.
