- 16 ozs Sirloin steak (trimmed)
- 2 white Cabbage (shredded finely)
- 1 stick Celery (julienned)
- 3 cups vegetable stock
- 1 cup Cider vinegar
- salt

Preparation steps
1.
Combine the cabbage, celery, stock and vinegar in a slow cooker with a little seasoning. Cover with a lid and braise on a low setting for 6 hours until the cabbage is softened.

Adjust the seasoning to taste and keep warm on a low setting as you cook the beef.

Preheat the oven to 200°C (180°C fan) | 400F | gas 6. Rub the beef with the oil and season generously.

Heat a large heatproof frying pan over a moderate heat until hot then seal the beef until golden brown in colour all over.
5.
Transfer to the oven to finish cooking for 6-12 minutes depending on desired degree of cooking.

Remove from the oven when ready and let it rest for 5 minutes before slicing.
7.
Spoon the cabbage into a metal wok and top with the slices of steak, the diced red pepper and a sprig of coriander before serving.
