- 35 ozs thick Flank Steak
- 2 Tbsps vegetable oil
- 1 handful thyme (half chopped)
- 6 sprigs rosemary (half chopped)
- 2 Tbsps Dijon mustard
- For the sauce
- ½ cup Mayonnaise
- ⅔ cup Sour cream
- ½ cup Chives (finely chopped)
- 2 hard-boiled eggs (chopped)
- 1 Tbsp lemon juice

Preparation steps
1.
Preheat the oven to its lowest temperature.

Remove any fat and tendons from the meat and season with salt. Fry on all sides in hot oil and then remove from the pan.

Place half the un-chopped herbs in a roasting tin. Brush the meat with mustard, season with pepper and sprinkle with the chopped herbs. Place in the roasting tin and top with the remaining herbs. Roast for around 1 hour; or a bit more or less depending how well done you like it. Core temperature medium approx. 55°C.
4.
To make the sauce, mix together the mayonnaise and sour cream until smooth. Stir in the chives and the eggs and season with lemon juice, salt and ground black pepper.
