- 1 ½ cups young peas (or fresh garden peas, shelled)
- 2 cups Oxtail (sliced)
- 2 ⅓ cups sliced, deli Roast beef (sliced)
- 4 Tbsps cream
- 3 Tbsps Nut oil
- 1 lemon (juiced)
- 4 cups Arugula (washed)
- 2 Tomatoes (thinly sliced)
- 2 small onions (cut into thin rings)

Preparation steps
1.
Place the peas in a steaming basked above a saucepan of simmering water, and steam for 5 minutes.
2.
Cut both the oxtail and roast beef into strips.
3.
Make a quick dressing by mixing the cream, oil, lemon juice, salt and pepper in a bowl.
4.
Mix the rocket, peas, beef, oxtail, tomatoes and onions in a large salad bowl and drizzle with the dressing.
5.
Serve with fresh bread for an ideal light meal.
