- 750 grams Pork tenderloin
- 120 grams Bacon (in slices)
- 4 shallots
- 4 Tbsps balsamic vinegar
- 30 milliliters Canola oil
- 30 milliliters mild olive oil
- salt
- freshly ground peppers
- 2 Tbsps sunflower oil
- coarse Sea salt
- Arugula (for garnish)

Preparation steps
1.
Trim pork tenderloin as needed and cut into equal sized cubes. Cut bacon slices in half crosswise. Fold bacon once and alternately stick with pork cubes on wooden skewers.
2.
Peel shallots and finely dice. Mix shallots in a bowl with vinegar, canola oil and olive oil and season with salt and pepper.
3.
Heat sunflower oil in a pan and fry pork and bacon skewers on all sides for 8-10 minutes and then season with pepper.
4.
Arrange skewers in bowl or dish and season with sea salt. Garnish with arugula. Serve immediately with the shallot mixture.
