Ingredients

For the satay skewers
2 cloves garlic cloves (finely chopped)
1 red chili pepper (deseeded and finely chopped)
1 shallot (finely chopped)
¼ tsp Cumin powder
¼ tsp Coriander
2 Tbsps light soy sauce
4 Tbsps Coconut milk
2 Tbsps Nut oil
2 ⅔ cups Pork loin (ready to cook, cut into 2 cm slices)
For the peanut sauce
1.333 cups peeled unsalted Peanuts
cup Coconut milk
2 Tbsps Peanut butter
½ tsp Curry powder
1 lemon (juice and zest)

Preparation steps

In a bowl, mix together the garlic, chilli, shallot, cumin, coriander, soy sauce, coconut milk and oil. Add the pork strips, turning to coat, cover and marinate for at least 2 hours.

Meanwhile, for the sauce, toast the peanuts in a pan without fat. Leave to cool, then finely crush in a mortar.

In a pan, bring the coconut milk, peanut butter and curry powder to the boil. Stir in the crushed peanuts, lemon juice and zest and boil for around 5 minutes until pale and creamy, stirring occasionally. Leave to cool completely.

Take the meat out of the marinade and thread onto 16 wooden skewers, folding to resemble waves. Barbecue for approx. 8 minutes, brushing from time to time with the marinade. Serve with the peanut sauce.
