Preparation steps

1.

Rinse chicken and pat dry. Season with salt, pepper, anisette and fennel seeds. Heat butter and oil in a roasting pan and sear chicken, breast-side down, then roast in an oven preheated to 220°C (approximately 425°F) for about 50 minutes. Flip and baste halfway through the cooking time.

2.

Cut lemon peel into fine strips. Rinse basil and cut into strips.

Remove chicken, let set briefly, then slice. Serve with lemon peel and basil.
