3 tablespoons extra virgin olive oil
1 ½ tablespoons lemon juice
1 clove garlic (minced)
¼ teaspoon Sea salt
¼ teaspoon freshly ground Black pepper (plus extra for garnish)
½ teaspoon dried oregano
For the salad
2 cups fresh Spinach (torn into 1-inch pieces)
3 tomatoes (cut into wedges)
¼ onion (sliced)
1 Cucumber (sliced in half lengthwise and cut into pieces)
1 small Red pepper (chopped in rings)
1 small, greeen pepper (chopped in rings)
1 cup Feta (crumbled or cut into small cubes)
16 kalamata Olives

Preparation steps

1.
Place the olive oil, lemon juice, garlic, salt, pepper and oregano in a small jar with a screw-top lid and shake to combine.
2.
Place the salad ingredients in a large bowl. Pour the dressing over the salad and toss gently to combine just before serving. Garnish with a little freshly ground black pepper.
3.
Serve with crusty bread, optional.
