200 grams Prawn (raw, ready for cooking peeled)
150 grams small Squid tentacle (ready to cook)
1 garlic clove
2 Tbsps vegetable oil (to saute)
1 ripe Mango
80 grams Snow peas
50 grams soybean sprout
juice 1 lemons
3 Tbsps sweet and spicy Chili sauce
1 Tbsp Fish sauce
3 Tbsps sesame oil
2 Tbsps minced cilantro

Preparation steps

Halve the squid tubes lengthwise and with a sharp knife, make diamond cuts into the inner side of the squid without cutting through. Cut into smaller pieces.

Cut along the rounded back of the shrimp and remove the black intestine. Peel and thinly slice the garlic. Heat the oil in a skillet and saute the squid and shrimp with the garlic for 1-2 minutes. Remove.

Peel the mango, cut the flesh from the pit and cut into thin wedges. Remove the strings from the snow peas and cook in a pot of boiling salted water until crisp-tender, 2 - 3 minutes. Drain, rinse under cold water and cut into thin strips. Rinse bean sprouts and drain well.

In a bowl, whisk together the lemon juice, fish sauce, chili sauce and oil. Add the squid, shrimp, mango, snow peas and sprouts and toss to combine. Arrange the seafood salad on plates and serve sprinkled with cilantro.
