- 200 grams Arugula
- 1 Mango
- 250 grams Cherry tomatoes
- 1 red chili pepper
- 1 handful Fresh herbs (such as chervil and parsley)
- 3 Tbsps Vegetable broth
- 4 Tbsps white balsamic vinegar
- 8 Tbsps olive oil
- 1 pinch sugar
- salt
- freshly ground peppers
- 4 Squid tentacles
Preparation steps

For the salad, rinse, trim and spin dry the arugula. Peel the mango, cut the flesh from the core and dice. Rinse and halve the tomatoes.

For the dressing, rinse the chile, cut in half, wipe dry and puree with the chopped herb leaves, broth, vinegar and 6 tablespoons of oil. Season with sugar, salt and pepper.

Rinse the squid, pat dry and season with salt and pepper. Saute in the remaining oil in a grill pan on both sides for 3-4 minutes.

Arrange all the prepared salad ingredients on plates. Cut the squid into pieces and spread over the salad. Serve drizzled with the dressing.
