Ingredients

8 shrimp (ready to cook, with tail)
5 Tbsps olive oil
1 garlic clove
juice of a Limes
1 Frisée
1 small Radicchio
2 scallions
1 Mango
2 Tbsps White vinegar
salt
freshly ground peppers
3 Tbsps Whipped cream
2 tsps Maple syrup
Lime wedge

Preparation steps

1.

For the marinade, mix 2 tablespoons of oil with the lime juice and finely chopped garlic. Mix with the shrimp and leave to marinate for about 30 minutes.

Divide the lettuce leaves, rinse, trim, shake dry and tear into bite-sized pieces. Rinse and trim the scallions and cut diagonally into 1 cm thick slices (approximately 1/2 inch).

Peel the mango and cut the flesh into columns.

4.

For the dressing, mix the vinegar with the syrup, cream and 2 tablespoons of oil and season with salt and pepper.

5.

Sear the shrimp on each side in some oil in a pan for about 2 minutes.

6.

Mix the salad ingredients with the dressing and transfer to a bowl. Arrange the shrimp on top and serve garnished with lime wedges.
