- 2 ripe Mangoes
- 4 Tomatoes
- 1 Red onion
- 150 grams mixed Wild herb salad (such as nettle, goutweed, sorrel)
- 400 grams cooked shrimp (peeled and deveined)
- 4 Tbsps olive oil
- 1 Tbsp White vinegar
- 1 Tbsp Lime juice
- 1 tsp freshly chopped cilantro
- 1 Tbsp freshly chopped parsley
- salt
- freshly ground peppers
- parsley (for garnishing)
Preparation steps

Peel mangoes and dice pulp into cubes. Rinse and quarter tomatoes, remove seeds and dice into small cubes. Peel onion and chop finely. Rinse and spin dry mixed greens.

Rinse shrimp, pat dry and mix with salad greens, mango cubes, tomato cubes and diced onion. Whisk oil with vinegar, lime juice, chopped cilantro and parsley, season with salt and pepper. Toss salad with the dressing. Arrange salad on plates and serve garnished with parsley leaves.
