- 1 cup cooked, baby shrimp (chopped)
- ½ cup Cucumber (peeled and finely chopped)
- ¼ cup Celery (finely chopped)
- 1 tsp crushed Red pepper flakes
- ¼ cup Mayonnaise
- 1 Tbsp lemon juice
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 6 hard boiled eggs
- Lemon thyme (for garnish)
Preparation steps

In a medium bowl, combine shrimp, cucumber, celery, crushed red pepper, mayonnaise and lemon juice. Season with salt and pepper and mix well until incorporated.

Cut eggs in half lengthwise. Scoop out yolks and discard.
3.
Spoon salad mixture into each egg hollows. Garnish with thyme. Served chilled or at room temperature.
