2 Tbsps Ketchup
2 tsps Cognac
1 tsp Horseradish
lemon juice
Worcestershire sauce
cayenne pepper
16 King prawn (ready-to-cook, with tails)
2 Tbsps olive oil
¼ Lettuce (torn into bite-sized pieces)
1 ripe Avocado (pitted, flesh scooped out and sliced)
1 small, ripe Mango (peeled and diced)
1 Tbsp Chives

Preparation steps

1.
Mix together the mayonnaise, ketchup, cognac and horseradish and season with the lemon juice, Worcester sauce, salt and cayenne pepper.
2.
Season the prawns with salt and ground black pepper and fry in hot oil for around 2 minutes until golden.
3.
Arrange the lettuce, avocado, mango and prawns in dishes and drizzle with the dressing. Serve garnished with chives.
