- 7 ozs dairy-free Mayonnaise
- 2 Tbsps tomato Ketchup
- ½ Tbsp chopped Basil
- 1 pinch cayenne pepper
- lemon juice
- 1 dash Tabasco sauce
- 7 ozs cooked, peeled shrimp
- ½ Cucumber (seeds removed, diced)
- 4 cherry Tomatoes (chopped)
- salt
- peppers
- To garnish
- Red basil
- Tortilla chip
Preparation steps
1.
Mix together the mayonnaise, ketchup, basil, cayenne pepper, a dash of lemon juice and Tabasco.
2.
Stir in the prawns, cucumber and tomatoes and season to taste with salt and pepper.
3.
Divide between 4 serving glasses and garnish with red basil and tortilla chips.
