7 ozs dairy-free Mayonnaise
2 Tbsps tomato Ketchup
½ Tbsp chopped Basil
1 pinch cayenne pepper
lemon juice
1 dash Tabasco sauce
7 ozs cooked, peeled shrimp
½ Cucumber (seeds removed, diced)
4 cherry tomatoes (chopped)
salt
peppers
To garnish
Red basil
Tortilla chip

Preparation steps

1.
Mix together the mayonnaise, ketchup, basil, cayenne pepper, a dash of lemon juice and Tabasco.
2.
Stir in the prawns, cucumber and tomatoes and season to taste with salt and pepper.
3.
Divide between 4 serving glasses and garnish with red basil and tortilla chips.
