Preparation steps

1.
Put the gooseberries and water into a large heavy-based pan. Heat gently to boiling point, then reduce the heat, cover the pan and simmer very gently for about 20-30 minutes until the skins are soft, stirring from time to time to prevent the fruit sticking. The actual time will depend on the ripeness of the fruit.

Stir in the sugar until completely dissolved and then bring to a boil.
3.
Boil rapidly for about 15-20 minutes until setting point is reached.
4.
Pour into warm sterilised jars, cover, seal and label.
