For the cake
1 cup all-purpose flour
1 ½ tsps Baking powder
½ cup caster sugar
1 egg
½ cup unsalted butter (melted)
1 tsp vanilla extract
For the custard topping
2 cups cream (35% fat)
½ cup caster sugar
1 ½ Tbsps Custard powder
2 egg yolks
1 tsp vanilla extract
1 ½ cups red Gooseberry (halved if large)
For the crumble topping
1 cup plain flour
½ cup butter
½ cup caster sugar

Preparation steps

For the cake: heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 20 cm|8" square cake tin.

Put all the cake ingredients into a mixing bowl and beat well until blended. Spoon into the tin.

For the topping: beat all the ingredients, except the gooseberries together until smooth. Stir in the gooseberries. Carefully pour over the cake base and bake for 35 minutes.
4.
For the crumble topping: rub the butter into the flour until the mixture resembles coarse breadcrumbs. Stir in the sugar.
5.
Remove the cake from the oven and sprinkle over the crumble topping. bake for a further 10-15 minutes until the topping is golden and the custard is set. Cool in the tin and cut into squares to serve.
