2 Tbsps Sesame seeds
1 Tbsp Peanut oil
1 Tbsp sesame oil
1 medium-size piece ginger
3 garlic cloves
3 scallions
1 Lime (juice)
1 Tbsp soy sauce
700 grams Sole fillet (skinless)
1 carrot
1 Zucchini

Preparation steps

1.

Toast sesame seeds in a dry, hot pan for about 1-2 minutes. Place in a bowl and set aside and add peanut and sesame oil to pan. Peel ginger and garlic and chop finely and fry in hot oil. Mix sesame seeds, scallions, lime juice and soy sauce into pan with ginger and garlic. Remove from heat.

Peel carrot and zucchini and use potato peeler to peel wide, thin ribbons. Blanch ribbons in boiling water and keep warm.

Grease bottom of a bamboo steamer or strainer and place on a pot over boiling water.

Cut sole fillets in half lengthwise and season with salt and pepper. Spread 3/4 of sesame mixture on fillets and roll up. Place rolls in steamer and spread remaining sesame mixture over it. Cook for about 6-7 minutes in a closed steamer. Fish is done when meat flakes easily and is white and no longer translucent.

5.

To serve, arrange fish rolls on carrot and zucchini ribbons.
