2 Tbsps Pine nuts

3 Tbsps Parmesan (freshly grated)
500 grams thinly sliced turkey breasts (4 slices)
2 Tbsps clarified butter
3 Tbsps lemon juice

Preparation steps

1.

Rinse basil and shake dry and pluck leaves and chop coarsely. Peel garlic and chop coarsely. Puree basil, garlic and pine nuts and season with salt and pepper and gradually add olive oil in a thin stream until pesto is creamy. Stir in parmesan and season to taste with salt and pepper.

Pat turkey dry and brush with lemon juice and season with salt and pepper.

Spread pesto on turkey slices and roll up from the long side and secure with toothpicks.

4.

In a pan, heat butter and brown turkey rolls for about 6 minutes on all sides. To serve, cut in half or cut into thin slices, if desired.
