4 sheets white gelatin
400 milliliters milk
20 grams butter
1 generous pinch Vanilla bean
80 grams sugar
1 pinch salt
50 grams Semolina flour
30 grams Semolina
3 eggs (separated)
400 grams Strawberries
1 untreated lemon (zest)

Preparation steps

Soak the gelatine in cold water to soften.

Bring the milk with the butter, the vanilla bean, sugar and salt to a boil. Sprinkle in semolina and bring to boil while stirring constantly. Remove from the heat and let the semolina swell for a few minutes. Stir the well drained gelatine and the yolks into the  warm porridge. Beat egg whites until very stiff and fold into the slightly cooled semolina cream. Rinse 4 pudding molds under cold water and pour in mixture. Allow to chill for at least 2 hours.

Meanwhile, rinse the strawberries, trim and cut the berries into pieces.

To serve,  unmold puddings and garnish with strawberries and lemon zest.
